It has been a busy week here at the roastery!

With 105 x 2kg wholesale bags and a whole lot of retail bags sent out between our cafes, and our wholesale partners; we pause to look back and give thanks to all our cafe customers, wholesale partners and at-home coffee lovers who are enjoying some Ministry coffee this week. 

It's amazing to think that just 2 years ago we started on our roasting journey on a small roaster at the back of our Elgin store roasting 5kg an hour. We then took over our roasting space last February and after some installation headaches, we finally got our brand new roaster up and running. With the power of a much larger roaster we now roast 15kg+ an hour, and on weeks like this are already looking to the future and a second even larger roaster to keep up. All thanks to you!

We started roasting after 8 years of trying our coffees from roasters from around the world wanting to do something different, something no one is doing in Ottawa.

We are flavour-focused and are working as much as possible directly with farms to bring in the best coffees we can, and to make sure the farmers make the most money they can. Our relationship with Perdido in Nicaragua is our first example where the farm is working with our head roaster Josef to bring unique coffee with unique processing techniques. We have also brought in some fine specialty-grade Robusta coffee. Quality-grade Robusta is something very new to specialty coffee. We are excited to see how it develops and to be the first in the area to source some.

Our next step is coffee education. With our roasting space, we now have room to host classes. We have been doing many lately with our own staff and wholesale partners, and in the new year will be offering classes to our customers. Stay tuned for info on classes in the next weeks.
